寿梨庵
A sake store that specializes in heated sake that I occasionally go out to. I have not been there in a long time for the purpose of purchasing this sake 🚙.
I was intrigued by the fact that they used Yamada Nishiki for the first time in this sake, which had previously been brewed with Tamakae.
When I asked the owner why, he replied, "It was probably cheaper. Really? 😅

Pale yellow. The standing aroma of lactic acidity was quite strong on the first sip, but it settled down as the day went by.
The characteristic is the sharp sharpness from the strong acidity. The spiciness lingers afterwards, but the umami of the rice is also clearly felt 🌾.
The casual and elegant flavor, the quality in an everyday sake atmosphere, I think the CP is very high 👍.
Is it my imagination that I feel the nuance of wood?
So far at room temperature. When chilled, it becomes tighter and drier. When heated, it has a different character at all temperatures. It is well-balanced both chilled and heated 😊.
I would recommend it at room temperature and hot.
