Nutty aroma and mature taste
It is sold from mid-September to November, and is a limited edition for the fall season. Autumn is the season of appetite. Hiyoroshi," popular in the fall, is shipped after about six months of storage after firing, while Saikaze is stored fresh in ice temperatures for six months. After one summer of sub-zero temperatures, the sake slowly and effortlessly rounds out while retaining some of its freshness. Saikaze" is a mixture of several kinds of kamikura that have become delicious during this period. The sweet aroma, reminiscent of fruit, is overlaid with the calmness of maturity. The gentle aroma of ripe pears and apples is complemented by a nutty, full-bodied flavor.
The palate is gentle, with a supple sharpness. The flavor is concentrated in this Jinzou. Nama-zake conveys the dynamism of the active yeast directly to the tongue.
