Shin Tsuchida's re-finished sake. The process is said to be similar to the ancient "shiori" method.
Cold but at room temperature.
The aroma is mildly banana-like. The taste is robust and rich, yet it does not cling to the tongue, and it does not lose when served with yellowtail zuke. It would be better to serve it a little warmer to emphasize the sweetness.
I would like to let it mature for about a year, but I am not confident that I have any bottles of No. 4 left.
