Today's wine is Dewa Sanzan by Ni-Usagi, a junmai ginjo polished to 55%. The mellow aroma of muscat and sweetness spread across the palate, but soon the spicy bitterness rushed in, and in the end, only the aroma of muscat passed through the nostrils. As you drink more, the aroma becomes less intense, and the dryness is more pronounced. As the label on the back says, it is a delicious sake with a very good balance of conflicting flavors such as sweet and spicy.
