Kagoshima Tenpyo. First comes the umami, followed by the acidity. It has a moderate richness and a complex flavor that is not overly polished, which is typical of junmai.
It is not often seen, and I bought this one at Sumiyoshi Shuhan in Fukuoka, so I wonder where I will find it next...
