This is a special junmai sake with a rice polishing ratio of 60%.
Upon investigation, the only sake rice used by Kido was "Yamadanishiki" and some "Gohyakumangoku," but this sake was brewed with "Omachi" from 2018 with a full commitment.
When poured into a glass, it has a fluffy, fruity, and subdued ginjo aroma. The first impression after drinking is a strong umami with a strong sense of Omachi. Overall, the flavor clearly shows the powerfulness of Omachi. This is delicious!
