This junmai sake is made from Ginbukietsu, a variety of rice grown with great care in Hata Shuzo's own rice paddies. This junmai sake is made with the utmost care and dedication, from the cultivation of the rice to the sake brewing process. The aroma is mild and pleasant, and the flavor of rice spreads in the mouth, The rich and robust flavor can be felt in the mouth. The strong acidity tightens the overall flavor, and the acidity, sweetness, bitterness, astringency, and spiciness intertwine to create a complex, rich, and slightly dry finish. The result is a full-bodied sake that is easy to drink and does not tire the drinker. We recommend drinking it lukewarm. Ojiro's sake rice is grown exclusively by contract farmers in Higashiomi City, including the Hata Sake Brewery, called "Tomi Hyakusho no Kai" (Association of One Hundred Laughs). The rice used for Ojiro is made from rice suitable for sake brewing grown only by contract farmers in Higashiomi City, including the Hata Brewery, and can truly be called "locally brewed sake.
