This is an acid-specific sake made with white malted rice (citric acid) + Yamahai (lactic acid) + NO77 yeast (malic acid).
Hiten seems to be a challenging series, and I look forward to more in the future.
The sensation of drinking this sake was similar to that of Koei Kiku, but the taste itself was different, and I thought it was also good. It is low in alcohol, and you can finish it in no time at all.
