The aroma is gentle and clean, with a sweet, acidic flavor. The aroma is mild, clean, acidic, umami, and sweet, and the taste is mild, but you can sense the high quality.
The mouthfeel is smooth and clean, just like water. From there, the acidity, umami, and sweetness come through elegantly and softly. The umami is a bit more full at the end, but it is still elegant and gentle. It leaves a pleasant umami aftertaste, and the fragrance is also umai-aru-howan.
As the temperature rises, the flavor becomes a little more pronounced, but the bitterness also comes out together. I liked it best when it was cooled down to 5 degrees Celsius.
The entrée was kelp with baby kelp, sea bream and fugu fritters, and pickled turnip. I was happy with all of them. It is indeed a beautiful food wine. I would like to pair it with elegant Japanese food.
If I were to use a Ghibli analogy, it would be Hisako-san in "Marnie of Memories". She is the old lady who painted the pictures of the mansion. She is gentle, kind and elegant.
