The rice is polished to 55%, 100% Iwate rice is used, and it is brewed with Ojishimizu, Iwate's famous water. I personally buy Asaikai and Suehiro when I find them. This time it was domestic rice, from Iwate Prefecture, but I was impressed by the fact that they used to make a really good sake from edible rice from Iwate Prefecture (for U1000 yen!) and serve it in the summer.
