Sometimes I have a strange urge to drink Aisan sake.
Today, Chiebijin.
I welcomed her with Yoko.
Two beautiful people with flowers in their hands.
The nose is very fruity and gorgeous.
In the mouth, there is a slight flat sweetness.
Then there is a variety of flavors.
Weak acidity, with a rich, full-bodied sweetness. Rich, full sweetness. Sweetness and astringency. A slight bitterness.
But it is also mellow and sweet.
Above all, it has an elegant alcohol flavor.
This is the Aisan.
This is the only sake I can drink all the time.
I'm in the middle of making an ate, but I don't think I'll ever get to finish it.
