This sake is brewed by the 6th generation brewer and toji, Chikara Urasato, using Ogawa yeast isolated by Dr. Chikara Ogawa and named after himself.
The aroma is sweet and slightly bitter. The aroma is sweet and slightly bitter with a hint of rice flavor. This is definitely a delicious sake.
When you put it in your mouth, the sweet and bitter tastes are clearly pronounced. From there, the sweetness and bitterness grows more pronounced, and then the umami comes in. Finally, there is a big splash of alcohol. It is the type of sake that wins gold medals at the New Sake Competition, but with added power. It has a strong sweetness, bitterness, and strength. Yum!

If I were to use a Ghibli analogy, it would be Ashitaka, the main character in "Princess Mononoke. He is strong mentally and physically, and also has a big bitter taste. And although he is serious and doesn't really stand out, he also has a sweetness to him. She tells Kaya, "I will always think of you, Kaya," or tells San, "You are beautiful," in a straightforward manner. He is a natural womanizer and a hard-looking guy.
