The white malted rice gives it a sour taste The raw sake is even fresher. I like the taste. This is a sister product of Pure Black. It is made from 100% Akita Prefecture sake brewing rice "Sake-komachi" with the same yeast and koji mold, and a combination of Akita Prefecture yeast "NO.12" and some white koji mold. The sweet and sour first kiss-like flavor is derived from citric acid, which is abundant in citrus fruits such as lemon.
