Kaze no Mori uses soft water for brewing and ultra-hard water for unrefining. I had never thought of that.
The aroma is slightly chemical and banana-like. There is a mild sweetness, followed by a calm umami, acidity, and bitter accents. The aftertaste is rather dry and refreshing, helped by the sharp carbonation.
It is strange, but I think it is well-balanced.
