Shinsei No.6 S-type @1person 1,200 yen 72ml Shinmasa is one of the most famous breweries that perfected the Akita-style brewing technique, the originator of the No. 6 yeast, and the founder of the Akita-style sake brewing. Founded in 1852, this brewery is the originator of the No. 6 yeast, which is used in many of its sake products. Since 1995, the brewery has been making new and innovative sake under the leadership of a young president and toji (master brewer). They use only Akita rice and Akita water, and brew sake simply and without any additives. The brand image of the sake has come to be known as "The Neo-Classic. The 8th generation head of the brewery, Yusuke Sato, a graduate of the University of Tokyo, has created a sake with a fresh and elegant aroma by using "Yeast No. 6," which has been passed down from generation to generation in the famous brewery. The sake is made with "Gin-no-Sei" koji rice and "Sake-Komachi & Miyamanishiki" kake rice, and the rice polishing ratio is 50%, making it a luxurious sake with a Junmai Daiginjo standard.
