Atago no Matsu, it has been a while.
The other day I heard about the arrival of summer sake and jumped at the chance to buy some.
It has a fruity ginjo aroma and a smooth, silky mouthfeel, but I think it is very well balanced, with a mellow umami and sweetness reminiscent of fruit trees, capped off by a soft acidity.
The entrée was delicious and went well with slightly fatty meat dishes.
