Merry Christmas saké to all!
Very interesting stuff. Kombu, mushroom, coconut meat, raw almond, butterscotch, toasted wood.
Slightly sweet, brimming with savory flavor. Meaty. Never had a saké with so much savoriness like that before. And the light bit of woodsy smokiness in the background makes for a very interesting combination.
Went well with Chinese food on Christmas Eve, and very good with lobster and crab on Christmas Day, and still some left to enjoy in the coming days.
