Well-balanced sake! The taste is balanced, with a little bit of refined umami added for a more expansive feel. The first time I heard of Kaze no Mori's original technique, "ikaki pickling," which is a method of collecting sake oozed out by osmotic pressure, and the taste was clearer than usual!
