Laematsu is a sake from our hometown Itami. It is called "Gomenzake" and seems to have been an official sake of the shogunate during the Edo period (1603-1868).
The image I had of this Old Pine so far was a sake that gave the impression of being so sweet that it left a sweet taste in my mouth.

However, this sake has a clear dry taste while retaining the flavor of nigori.
It is a good sake in the current style.
Also, the sourness at the time of opening the bottle gradually eases over a few days, and the dryness gradually becomes more pronounced, making it a fun sake to drink.
