It's refreshing. Hmm? It's a little gassy. I might have mistaken it for a draft sake. I'm glad to see that sometimes I encounter a sake that is still gassy when it is fired.
The acidity is lemon-like. The umami is moderate and sharp, so the image is like a lemon sour. Therefore, it is more of a sipping type that should be enjoyed with the throat rather than the tip of the tongue. The website says it has a "solid feel. A good description. It is not super dry, but it is dry and easy to drink.
Yuu" is brewed by Hakuryu. A few years ago, the toji was replaced by a woman who trained at Kamikawa Taisetsu Shuzo. From there, all the sake is now junmai (pure rice). She is still young and is said to be the "Mako-sama" of Eiheiji.
