Akita Sake Tobirazumi Hi-Tsuki type-A This sake specializes in acidity by using "triple acid", which is a combination of three acids: No.77 yeast (malic acid), Yamahai yeast (lactic acid), and white malted rice (citric acidity). Even so, the sake has a Sake meter rating of -16. Because of its strong acidity, it does not have much sweetness. I am not a big fan of sake with strong acidity, but my wife is addicted to SENKYO's "Kabutomushi," so I bought it. My wife's evaluation was, "Compared to Kabutomushi, this sake may have more alcohol taste. She said, "It might be more alcoholic than Kabutomushi. Degree of liking 8/10
