Sentori after a long time
It is dry, dry and cloudy, with a matte umami taste that spreads later. The elegant, light acidity is gorgeous, with hints of peach and lychee.
When mixed, it becomes cloudy and mild. Strangely enough, when mixed, the dryness of the flavor fades and instead the aftertaste becomes sharp and clean. I may be mistaken, though.
This muddiness seems to have a good balance with a slight bitterness in the aftertaste.
Incidentally, I served it with oysters de oyster fritters purchased in Yamada-machi.
Oysters from Yamada-cho will be delicious from now on in the spring!
