Very bright "green" aromas at first, like apple and grass. This quickly deepens into a plum-like sweetness, before revealing a rich, almost meaty tone of mushrooms and umami.
The palate is quite thick on the tongue, with a very bold acidity. It is not heavy though, and dissipates rather quickly. Sweet and acidic like nectarines and apricot. However also a sweet, cereal flavour that reminds me of corn on the cob.
Short, but not dry finish.
Overall very quirky and interesting.
