(The new brand was launched to take on the challenge of transforming the brewery from a brewery (brand name: Jyobari) to a mainstay junmai sake brewery.
The new brand "Morai" was created to "pass on to the future the Touji's commitment to sake brewing that has been passed down through 300 years of history" and to "take on the challenge of the changing times.
The number of koku of sake produced has been greatly reduced from the 20,000 koku produced at the height of the old brewery, and only about 700 koku of sake is carefully brewed by hand.
Iwaki, and the new junmai ginjo sake is inspired by the "Giant Salamander," and the illustration depicts a scene of a salamander gazing up at Mt.
