The aroma is fresh and refreshing, and only the part of the rice that is most flavourful when it is squeezed is used to make this Junmai "chutori". Because it is not filtered, the mellow flavor inherent in the rice itself fills the mouth, and the pleasant acidity is well-balanced, making it a superbly sweet Junmai. A little bitterness accentuates the back end and makes the sake crisp and clear.
