ヒンデ
I am always interested in sake made from Sake Mirai, a sake rice developed by Takagi Shuzo, the brewer of Jyushiyo. This time, for the first time, I was able to try Sake Mirai made from Ichibakusuisei rice.
What was it like? It was somewhat different from the Sake Mirai I have had in the past. The aroma and sweetness are moderate, but after the umami of the rice, you can taste the acidity and the aftertaste disappears nicely.
There is not much change in taste after opening the bottle.
