100% Kinmon-Nishiki, 49% polished rice, 15% alcohol by volume. It has a gorgeous aroma and a firm umami flavor. It has a fruity sweetness and umami flavor, but it also has a sharpness that keeps you on the edge of your seat. It is delicious. The label reads, "This bottle expresses our company's desire to be the first in Nagano Prefecture to market ginjo-shu and our bet on the potential of Kinmon-nishiki. It is a sake brewed with the terroir of Asashina Gorobei Shinden in Saku City, which has clay soil, and with the challenge of growing the best sake rice with reduced use of agricultural chemicals". It is a sake with a gorgeous aroma and flavor.
