The "specially cultivated rice Hinohikari" from Nara Prefecture was used to brew and ferment the sake in a traditional wooden vat.
It has soft acidity, pleasantly spreading umami and sweetness on the palate. The taste is complex and exquisite, yet it does not lose its overall sharpness. This is a gem that can only be experienced by brewing in wooden vats.
