Some yeast collected and cultivated in the brewery is added, and it is characterized by a complex acidity not unlike that of white wine. It is a sake for sipping. Only 30 grains of Hinomaru Kake rice were left in the Miyagi Prefecture's pesticide test, which took three years to cultivate.
