It has a refreshing sweet and sour taste, with a unique aroma due to the 807 and low rice polishing. It is a very different sake from the clear, watery sake or the refined, polished, and pure sake of the jun-dai class. Aizan is sweeter than the Shirakiku Collaboration Jun Dai from Okunoto the other day. Different....
As expected from Kaze no Mori, this is a sake not to be missed along with the nearby Chiyo (Shinomine).
I am thinking of opening a bottle of Takachiyo's 59 Aizan next to compare. If you want to compare Aizan, there is also Maruishi's Niwolf (lol).
I didn't know that Kaze no Mori is also written on the bottom of the bottle.
