I was attracted by the summery look of the label.
This is my first Shinomine. This is my first Omachi.
The aroma is restrained. When you drink it, the first thing you taste is the umami of rice and a subtle gaseous sensation in your mouth. In the middle part of the bottle, there is a moderate acidity with gas, followed by a slight bitterness, and it finishes with a smooth finish.
There is no unnecessary sweetness, so you find yourself drinking more and more of this dangerous brew.
It would go well with chilled tofu with a lot of ginger.
If you put it in the freezer, the taste will become clearer.
It is a little gassy, but why is there not much bubbles in the glass?
