Just a hint of ginjo aroma, sweetness and deep umami, followed immediately by a strong spiciness. It also has a good sharpness. The dryness lasts until the aftertaste. It is not just Junmai-shu, and the label "Kyokkan Junmai" convinces me. It seems to have been finished slowly with low sound fermentation.
