The concept of the first Yamamoto is "Yamahai brewed sake to be drunk chilled". The aroma is of rice with a hint of sourness and bitterness... .... The aftertaste is very sharp. It is a sake that should be cooled down to a crisp. The mouthfeel is complex...there is no sweetness at all. I'm having bonito with silver skin, myoga with sesame oil, and fried oysters as snacks.... It goes well with sashimi....delicious....
