Yukino Kayasha Junmai Ginjo Namaishu
I have been drinking only nigori sake recently, so I wanted to try a clear sake once in a while.
The taste is fresh, as is typical of nama-shu. You can feel the full flavor of the rice, but without too much sourness or bitterness. Unlike nigori sake, it has a slightly greenish taste. Yukino Kayasha's Yamahai is also delicious hot, but this one is best served cold, in a glass of chilled sake, and is best drunk in small sips. It is best served cold, with a glass of chilled sake, and with smoked cheese or something else while you feel the sake on your tongue.
