Banshu Yamadanishiki Polishing ratio 35 This is the first Daiginjo Orikarami in two years, and the impression is the same. It has a good balance of sweetness and transparency with a moderate bitterness. The dryness of the alcohol makes it drinkable and refreshing. Daiginjo brewed for the National Shinshu Authentication Competition is collected from the hanging bag by the drop. The "yamezukuri" portion is bottled, and the lees from the chukumi portion are mixed in to make this special bottle. Chill it to the perfect temperature.
