I heard "chicara" is Italian for cicada. I wonder if this is the last of the summer liquors lol. It seems to be a patented yeast with high malic acid production. It really has a fruity apple aroma, and I drank it chilled. It was one word, "umai" (delicious). I also read that it has a gentle "sweetness" at room temperature, but it is good chilled.
