<It's a step ahead of "hinee sake. This brand will be discontinued in 2019. This sake is also 30BY and has been aged for 2 to 3 years. The aroma is definitely aged. The aroma is definitely already aged, and it's just a step away from being old. But that peculiarity is good. The mouthfeel is very smooth. There is a sweetness and umami in the center of the sourness that has been added by the aging process to the typical Yamahai taste. Then, the bitterness and the umami of the aging come from the back. This is a good combination of Yamahai, Honjozo, and aging. To be honest, it is not recommended for beginners. It is full of peculiarities. But it's a dangerous swamp to get into. I definitely want to drink this feeling warmed up. I heard it's hidden and doesn't get reduced easily, so I'd like to try it heated next time I come. If I were to use a Ghibli analogy, I'd say it's Pom Grandpa from Castle in the Sky, and it's aged just as well at 70 years old. He's kind to Pazoo, but he's definitely an old man with a lot of quirks when he gets back to town. Satisfaction: ★★★★ I'll post the full version on the blog, complete with character images and such.
