The 2014 Yono Tori, courtesy of the restaurant. It looks like a first lot of Yono-tori.
I was impressed by what happens when you let a noble sake rest.
The sweetness is still there, but it is clean and sweet, and the flavor spreads in the mouth. The melon-like sweetness is still there.
It's interesting to see the difference between the old and new bottles.
