The first daiginjo in a long time. This is an aggressively named sake from Eikoh Fuji, which is named after hypernova, a supernova with ten times the energy of a supernova.
It has the cleanliness of a Daiginjo, but also has a sense of body, and the flavor of the rice is felt, but it is dominated by a mild acidity that creates a very pleasant aftertaste. The aroma is of melon with a nice aftertaste.
I can feel the aggressiveness of Fuji Shuzo in using the new variety, Yukiwakamaru.
