Koei-Kiku Ikubou Although made from a traditional sake yeast yeast, the acidity is moderate, as is usually the case with Koei Kiku. The taste is reminiscent of dense sweetness and sourness like apricots. I personally prefer a more subdued acidity like this, but the Koeikiku character is weak.
