Rigel
I don't want to open it but I have two bottles so I opened one. 2016 VT 😍.
Beautiful color like amber, aroma and beautifully aged!
It has a concentrated, syrupy sweetness from the aging process, and the alcohol has been nicely cornered, making it very easy to drink.
There is a slight soupiness and graininess from the aging process, but it disappears gradually, and even though it is a kijoshu, you will not get tired of drinking it!
With such a good balance of sweetness, it can be served with food, too.
This sake is at its best when it is warmed up; above 60°C, it becomes light, but between 45°C and 55°C, the umami and caramel-like flavors of mature sake appear, making it an easy-to-drink heated sake.

Rigel
The day after opening the bottle, it was easier to drink than the day before, probably because it was exposed to the open air. It tastes like what we drank at UTAGE in the fall.
