Comments
The first thing that surprised me was the aroma. It had a strong acidity like yogurt to drink and a unique aroma that reminded me of lactic acid bacteria. In the taste, the acidity was the strongest point, as was the aroma, and the sweetness was weak but deep, creating a slightly complex taste. The aftertaste is also predominantly sour, with a long and strong sourness that spreads in the mouth all at once, and I felt that this sake is predominantly sour. By the way, this sake requires refrigeration, but if you drink it at room temperature, you will get a sense of condensation (complex flavor) and a different taste.
