Mr. Okazumi, who has four and a half years of experience as a brewer at the Shinsei Sake Brewery in Akita Prefecture, launched the "Inato Agabe" project to obtain a new sake manufacturing license.
The sake made from 90% polished but naturally grown Sasanishiki without pesticides was very clear and soft, with a gentle sweetness ^_^.
