Yamahai Junmai Ginjo, limited to Ishikawa Prefecture. I bought it when I visited the brewery on a trip. Aroma of rice, blue fruits, and whey. In the mouth, it has a rich sweetness and umami, but is immediately cut off by a firm acidity that leaves a moderate bitterness. I drank it at home while eating stir-fried food with yakiniku sauce, and it was the perfect match. I think it is a versatile food sake. It's a very tasty sake, and I personally will have to try it again! It's only available in Ishikawa Prefecture though😅.
