I once drank a sake made by Okura using Jinryoku as the sake rice. When I researched about Jinryoku, I found out that there is a brewery that revived it in Fukuoka, and I was curious about this sake.
This sake is made by the Tamamizu Sake Brewery in Takada-cho, Miyama City.
It has a modest top-fragrance, with a faint sweet aroma.
It has a unique flavor like an aged sake.
It has a firm umami and sweetness, which gradually fades away.
This peculiar peculiarity is the same as that of Okura's Jinryoku 😅.
I thought it was peculiar because it's Okura, but it's not.
