55% polished rice, Junmai Ginjo, 17.5% alcohol by volume, Manufactured with Yamadanishiki produced in the Kamiihigashi district of Higashiizumo Town
It was brewed in 1995, when Jouki VI entered the brewery for the first time and brewed one small dank bottle by himself. This is a gem that draws out the character of the wild Kamiihigashi rice, and continues to exude a presence that can be described as "Ohroku.
Heating sake brings out the sweetness and umami of the Yamadanishiki. Relatively good at all temperatures. Soft touch. It tastes like chocolate. Good acidity and a refreshing aftertaste while remaining mild. Great as a food sake. It is also delicious heated.
