Akatake's Junmai Hiyaoroshi. It seemed to have a good reputation here too, so I bought it. I've drunk a lot of Akatake, but this was my first hiyaoroshi.
The aroma is mild.
It has a calm and soft texture.
It has just the right amount of sweetness and acidity, and the flavor rushes in.
It is not too fruity for Akutake and is relatively dry, but the sweet and sour taste unique to Akutake is still there.
It's as stable as it gets. The hurdle was high, but it was as good as I expected it to be.
