Murayu Tokiwa Label (Junmai Daiginjo standard) Niigata is associated with light and dry, but this one is quite sweet, and quite tasty! Even though it is sweet, it has a nice, elegant sweetness and is not sticky. It has a distinctive taste that sets it apart from other sake, and I personally rank it quite high! Founded in 1948, Murayu Sake Brewery Co. is a relatively new brewery among sake breweries. Although Murayu has a history of winning gold medals in sake competitions in the past, they have stopped exhibiting their sake in competitions at this time because of their policy of placing the greatest importance on "sake that people who drink it think is delicious. Neither the specific name nor the rice polishing ratio is written on the label in the hope that people can judge whether or not the sake tastes good without preconceived notions. They are particular about careful production and produce only 200 koku per year (1 koku = 180 liters = 100 bottles), so it is hard to find it, but if you happen to see it, I will definitely buy it next time. PS: The sourness gets stronger with each passing day. The first day was the sweetest and tastiest. When I drank Murayu with a ceramic boar cup, it tasted similar to Nidashi Zenju Melon 3.33 when I drank it with a glass. I recommend drinking Murayu in a glass rather than ceramic.
