Description. Nara Prefecture's only sake brewing rice promotion variety, "dewy leaf wind" is a variety that once ceased to exist due to difficulties in cultivation, but has been revived. It is a crossbreed of Shirokuro and early Futaba, and is characterized by its larger heart white than Yamadanishiki, but it is a unique rice that absorbs water quickly and is difficult to process as a raw material. The taste is full and round, like a pineapple compote, but thanks to the beautiful acidity and a slight effervescence typical of Kaze no Mori, it is not at all sweet or high in alcohol. It is a complex flavor. Delicious.
