Washio is a brewery that produces many dry sake with a robust flavor, but the first time I tried Hokumado Sanyu, it had a mellow, sweet flavor, but with a robust umami. The name Hokumado Sanyu is said to refer to the sake, qin, and poetry in a poem by Bai Juyi. 17.5° and unpasteurized, or so I thought.
